Ask what stays stable
List what changes between real, permitted samples: field labels, position, row count, page count, language and document type. A stable layout may suit an explicit template. A changing layout may justify evaluating a more flexible method, but flexibility does not establish correctness. The method choice should follow observed variation. Do not call every file from one sender a single format without looking at the exceptional files too.
Separate occasional from recurring work
An occasional table import may be adequately handled in an existing compatible spreadsheet tool. Repeated email attachments, different layouts or a required structured destination may warrant a dedicated extraction workflow.
